Strawberry Pie

  1. Prepare pie crust. Cool.
  2. Mix 1 cup sliced strawberries and 2/3 cup water. Simmer 3 minutes.
  3. Blend 1 scant cup sugar, 3 tablespoons cornstarch and 1/3 cup water. Add to cooked strawberries. Boil until thick, about 1 minute. Cool.
There are about 3 cups of sliced strawberries in the pie shell. Be sure they are dry, or the crust will get soggy. Pour the cooked strawberry mixture over the fresh strawberries. Chill at least a couple of hours. It makes a nice 4th of July dessert. Or in this case, 3rd of July. (This same recipe works really well with blueberries.) Late edit: I have the best luck when I mix the cooked strawberry mixture and the fresh strawberries together before I put it all into the pie shell. It sets up better.
